Alain Mathias Chablis 1er Cru Vau de Vey - Harvested for the first time in 2017, this plot is in the process of conversion to organic viticulture, it is ideally exposed and very steep. Therefore, we carry out most of the work, including the harvest, by hand. Vinification in jugs and barrels followed by maturation on lees in these same barrels brings substance and complexity to this very mineral cuvée!

The Alain Mathias Chablis 1er Cru Vau de Vey does not have a pedigree... At the Domaine Mathias, Carole and Bastien welcome you to the family estate of 13ha of vineyards. This wine domain was created in the 1980s by Alain Mathias, Bastien's father. It is a very versatile wine domain producing white, and red wines on the plains of Chablis, Bourgogne AOC, Epineuil. Since 2015, Domaine Mathias has been certified organic and the Mathias family attaches great importance to 'respect for nature and the environment'. Which includes integral ploughing, weeding and tillage. But also treatments against vine diseases with biodegradable agents by rain testify to responsible and professional farming.

Carole and Bastien, oenologists trained in Dijon, have their hearts set on their profession as winemakers. They bring their advice and skills to add to Alain Mathias' 30 years of experience.
