Amarone Della Valpolicella grapes are dried for around 3-4 months after harvest. During this process, the grapes lose an average of 45% of their weight resulting in a concentration of their substances. Around January, the grapes are pressed where they then undergo a month-long fermentation process. Maturation takes place in French oak barriques and tonneaux over a period that can vary from 42 to 50 months before maturing in bottle for a year....
